tuna rice salad
white poppy wishes, by roxanne s. sukhan Tuesday, May 20, 2008Ingredients: cooked white rice ~ chilled; 1 large spanish onion ~ finely chopped; paprika, garlic pepper; other seasons (all to taste); red, orange and/or yellow bell peppers ~diced; maggi sauce; red hot or tobasco sauce; balsamic vinegar, lemon-butter dill sauce; dill pickles ~ finely chopped; relish; 2 or 3 hard-boiled eggs; 2 or 3 cans of flaked tuna.
~mix all ingredients together and serve~
Just something I made up, it's sort of a derivative of Salad Nicoise, which the Pilot made for me once, when I was in Somerset. Being lazy on this particular evening, I chose to substitute rice for potatoes. Yummy ... if I do say so, myself.
